The raspberry cream stays scoopable even at -20 °C, so it can be layered with gelato and portioned without cracking: layer it with white chocolate or fior di latte.
Ideal for: layered cremino gelato in the display, variegates, gelato cakes and semifreddi, in gelato shops and pastry labs.
