Pink Grapefruit Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with a fresh, citrusy pink grapefruit taste, with a citrusy, fresh and pleasantly bitter profile.

Pink grapefruit gives a citrusy, slightly bitter, very refreshing sorbet; it pairs with Campari, ginger and red berries.

Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
