Pear Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with a sweet, natural pear taste, with a sweet, juicy and delicately aromatic profile.

Pear gives a sweet, delicate sorbet, ideal in the colder months too; it pairs with dark chocolate, cinnamon and ricotta.

Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free, Halal certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
