Dulce de leche, the Argentine caramelised milk cream, gives a sweet, rounded gelato to finish with caramel sauce.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
