DESCRIPTION AND SUGGESTIONS

Rum Brittle Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of hazelnut brittle and rum.

Hazelnut brittle and rum give a warm, indulgent gelato, to finish with caramelised chopped hazelnuts. The roasted notes of hazelnut meet the aromatic warmth of rum, for a rich gelato with a long finish.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Features: gluten-free, Kosher certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
