DESCRIPTION AND SUGGESTIONS
Arlecchino Martini Gelato is a powder base with refined vegetable fats for artisan gelato with a milk and vanilla taste and excellent creaminess.
Its milk-vanilla profile is a versatile base for fior di latte and all cream flavours, to enrich with pastes and variegates.
Ideal for: fior di latte and cream flavours.
Features: gluten-free, no hydrogenated fats.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 230-250 g of sugar per 1 L of milk.
Processing: hot.
