Meringue gives a sweet, light flavour, perfect for creating a pavlova flavour with red fruits or pairings with lemon and berries.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Recommended pairings: red fruits, lemon and berries.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
