Cinnamon Gelato Paste Leagel is a classic paste for artisan gelato with the typical taste of the oriental spice, for warm, spiced gelato.

Cinnamon gives gelato a warm, spicy aroma, perfect in the colder months: it pairs with apple, pear and dark chocolate and suits flavours inspired by strudel and Christmas desserts. The paste is worked cold.

Ideal for: cinnamon gelato, apple and chocolate pairings.

Features: gluten-free.

Directions: add the paste to the white base, mix well and batch-freeze.

Dosage: 50 g per kg of mix.
