DESCRIPTION AND SUGGESTIONS
Salted Caramel Gelato Stick Coating Rubicone is a coating for artisan gelato on a stick with a salted caramel taste.
Salted caramel gives sticks a crunchy sweet-and-salty shell, and is also used to coat semifreddi and single portions.
Ideal for: artisan gelato sticks, pralines, stracciatella in trays and semifreddi, in gelato shops and pastry labs.
Features: sets on contact with gelato, crunchy effect, gluten-free, Kosher certified.
Directions: warm to 40 °C, dip the well-frozen stick or drizzle over gelato.
Dosage: to taste for coating sticks and pralines or as stracciatella.
