DESCRIPTION AND SUGGESTIONS
Dubai Chocolate Martini Gelato is a complete powder base for artisan milk chocolate gelato with cocoa nib inclusions, designed for the Dubai flavour.
For Dubai Chocolate gelato, variegate it with Brunella CROK Pistachio Dubai and build a crunchy first layer with Martini milk stracciatella.
Ideal for: Dubai Chocolate gelato, cremino and trend flavours.
Directions: dissolve the base in boiling water with a stick blender, allow to cool and batch-freeze.
Dosage: 1.85 kg of product + 2.2 kg of boiling water.
Processing: hot.
