DESCRIPTION AND SUGGESTIONS
Augusto 185 Rubicone is a powder base for artisan gelato of high quality, with great structure and long-lasting creaminess.
At 185 g of base and 190 g of sugar per litre of milk it gives great structure and a creaminess that lasts in the display case.
Ideal for: cream gelato and fior di latte to customise in the gelato lab.
Features: gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.
Dosage: 185 g of base and 190 g of sugar per 1 L of milk.
Processing: hot.
