DESCRIPTION AND SUGGESTIONS
Pistachio Elite - Pistachio Intense Gelato Paste Pregel is a stabilised pistachio paste for artisan gelato with 99.5% Mediterranean pistachios.
A touch of salt enhances the roasted notes for an intense, clean pistachio taste: ideal for a lower-sugar pistachio gelato and excellent in mousses, ganache and creams, with a vibrant colour.
Ideal for: pistachio gelato, mousses, ganache and pastry creams.
Features: 99.5% pistachios, vegan, gluten-free, Kosher Pareve and Halal Italia.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-120 g per kg of base mix.
