DESCRIPTION AND SUGGESTIONS
Pure Pistachio Diamante Gelato Paste Martini is a 100% roasted pistachio paste, with no flavourings or colourings, for natural, genuine artisan gelato.
It blends Californian and Iranian Perfect Green pistachios; because it is natural, its colour leans towards beige and light brown.
Ideal for: natural pistachio gelato, cremino and semifreddo.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
