Roasted Almond Gelato Paste Pregel is a classic roasted almond paste for artisan gelato, made with selected almonds.
It contains about 35% almonds and the roasting brings out their full flavour: a deep, lingering aroma and creamy texture, for gelato, pastry and desserts. Selected almonds ensure consistent quality.
Ideal for: almond gelato, Sicilian-style flavours, pastry and desserts.
Features: about 35% almonds, gluten-free, palm oil free.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 70-100 g per kg of base mix.
