DESCRIPTION AND SUGGESTIONS
Lemon 50 S Martini Gelato is a stabilised powder mix rich in lemon juice with natural flavourings, for artisan lemon sorbet.
It recreates the typical taste and acidity of lemon with a simple recipe of water, sugar and dextrose, consistent all year round.
Ideal for: lemon sorbet and granita.
Features: gluten-free, vegan, no hydrogenated fats.
Directions: blend powders and sugars, add to the water, blend and batch-freeze.
Dosage: 1 L of water + 375 g of sugar + 25 g of dextrose + 50 g of mix.
Processing: cold.
