DESCRIPTION AND SUGGESTIONS
Bianca Zero Martini Gelato is a complete powder base with stevia, no added sugar and no fat, for excellent artisan cream gelato.
It is made with milk and a little fresh cream and lets you offer cream flavours to customers looking for gelato with no added sugar.
Ideal for: no-added-sugar gelato and cream flavours.
Features: gluten-free, no hydrogenated fats.
Directions: blend base and sugar, add to milk and cream, pasteurise and batch-freeze.
Dosage: 0.85 kg of product + 2.7 kg of milk + 0.15 kg of fresh cream.
Processing: hot.
