DESCRIPTION AND SUGGESTIONS
Ice Mix Base for Alcoholic Gelato - Aperitivo Gelato Leagel, a base for artisan gelato, is designed for alcoholic gelato: it allows any alcoholic ingredient in the recipe while solving the texture and consistency problems typical of these flavours. Perfect for bringing aperitif time to the gelato shop.
Ice Mix base is one of the ingredients of the Leagel Gelato Spritz recipe; it also appears in Gelato Hugo.
Ideal for: prosecco, Hugo, Spritz and cocktail gelato.
Features: coconut vegetable fat, gluten-free.
Directions: dissolve in hot water, add the spirit and batch-freeze.
Dosage: e.g. 1000 g Ice Mix + 1800 g water + 1000 g prosecco + 200 g Hugo paste.
Processing: hot, at 50 °C.
