Tart Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of traditional crostata, with a sweet, buttery and fragrant profile, with notes of freshly baked shortcrust pastry.

The buttery, fragrant taste of crostata is completed with an apricot or berry jam variegate and crumbled shortcrust.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
