Amaretto Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of traditional Italian biscuit and almond, with a sweet, roasted and aromatic profile.

The aroma of bitter almond and toasted biscuit gives a recognisable amaretto gelato; vegan, it also works on a water base and is finished with crumbled amaretti.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free, Kosher certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
