Santo Domingo with Drops Leagel is a balanced powder mix for artisan chocolate gelato with low-fat cocoa and dark chocolate chips from Dominican Republic cocoa mass, simplifying lab work.
It gives a rich, refined gelato and is made with boiling water.
Ideal for: single-origin chocolate gelato and gourmet sundaes.
Features: balanced base, no balancing errors, gluten-free.
Directions: dissolve in hot water, leave to cool and batch-freeze.
Dosage: 400 g of product + 600 g of boiling water.
Processing: hot, at 80 °C.
