This version of Pure Mediterranean Pistachio Gelato Paste Leagel is also designed for pastry: intensely roasted pistachios with a touch of chlorophyll, perfect for pastry creams, mousses and fillings.

The colour is bright green and the taste full, in gelato as well as in pastry.

Ideal for: pistachio pastry cream, mousses, filled croissants and gelato.

Features: Mediterranean pistachios, gluten-free.

Directions: add the paste to the white base, mix well and batch-freeze.

Dosage: 80 g per kg of mix.
