Black Sesame Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a black sesame taste, with an intense, roasted and slightly bitter profile.

Pure black sesame paste: it gives a dark grey gelato with a roasted, slightly bitter taste, typical of Japanese desserts.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 80 - 100 g per kg of mix.
