DESCRIPTION AND SUGGESTIONS
Biancolatte 150 S.A. Martini Gelato is a pre-balanced powder base, rich in milk and refined vegetable fats, without flavourings to bring out every flavour.
It combines the creaminess of the 150 version with a neutral taste, perfect when working with high-quality nut or chocolate pastes.
Ideal for: cream flavours with nut and chocolate pastes.
Features: gluten-free, no hydrogenated fats, no added flavourings, Halal certified.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 150 g of base and 200-220 g of sugar per 1 L of milk.
Processing: hot.
