DESCRIPTION AND SUGGESTIONS
Almond Diamante Avorio Gelato Paste Martini is a 100% almond paste from the Diamante range, for artisan gelato with a pale colour and a round taste.
Its ivory tone highlights the natural look of almond in the display case; with coconut paste and Brunella Hazelnut TOP it makes a baci di dama flavour.
Ideal for: almond gelato, granita and Sicilian-style flavours.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80 g per kg of mix.
