DESCRIPTION AND SUGGESTIONS
Leagel olive oil improver is a fully vegan product made from olive oil with its bitterness removed and a light vanilla taste. It adds structure to all gelato and is recommended for all vegan preparations.
In the Leagel Cremino Espressino al Pistacchio recipe, olive oil improver is paired with Base Vegan and Caffè Solubile 100% Arabica; it also appears in Camomilla, Melissa e Passiflora.
Ideal for: vegan gelato, sorbets and soya and rice bases.
Features: flavour: vaniglia, fats: vegetable (oliva), vegan, gluten-free.
Directions: add it to the base mix and batch-freeze.
Dosage: 30-60 g per kg of mix.
Processing: cold.
