DESCRIPTION AND SUGGESTIONS
Leagel Vegan base is the VeganOk-certified white base for a whole display of vegan gelato: completed with olive oil improver and VeganOk-certified Leagel pastes.
Vegan base is one of the ingredients of the Leagel Cremino Espressino al Pistacchio recipe, together with Miglioratore a base di Olio d'Oliva and Caffè Solubile 100% Arabica; it simplifies the work, with a single dose to weigh.
Ideal for: vegan cream and fruit gelato and semifreddi.
Features: fat-free, vegan, gluten-free.
Directions: dissolve in water at 50 °C, leave for a few minutes and batch-freeze.
Dosage: 280 g of product + 570 g of water + 30 g of olive oil improver.
Processing: hot (50 °C).
