DESCRIPTION AND SUGGESTIONS
Martini Gelato Hazelnut Creamy Diamante Paste is a stabilised, flavoured hazelnut paste, for artisan hazelnut gelato with a creamy result.
Stabilisation prevents oil separation and makes the paste easy to dose, with consistent results in the pan day after day.
Ideal for: hazelnut gelato, daily production and cremino.
Features: gluten-free, vegan, no hydrogenated fats, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
