DESCRIPTION AND SUGGESTIONS
Martini Gelato Pure Green Pistachio Diamante Paste is a pistachio paste with natural colouring, for high-quality artisan gelato with a green hue.
A pinch of chlorophyll gives a natural-looking, not too bright green, keeping the Californian and Perfect Green pistachio blend of the Puro version.
Ideal for: green pistachio gelato, cremino and semifreddo.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
