Martini Gelato Hazelnut Cortese Diamante Paste is a paste of 100% Italian hazelnuts with a light roast, for artisan gelato with a delicate taste.
It gives a light-brown hazelnut gelato with a fine aroma, suited to those who prefer an elegant, lightly roasted hazelnut.
Ideal for: hazelnut gelato, gianduia and semifreddo.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
