DESCRIPTION AND SUGGESTIONS
Martini Gelato Green Pistachio Diamante Paste is a pistachio paste with natural colouring, for artisan gelato with an intense yet natural green.
It blends Californian pistachios, with a delicate aroma, and Iranian ones, with a bolder taste; chlorophyll gives the green colour customers expect.
Ideal for: pistachio gelato, cremino and cups.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
