DESCRIPTION AND SUGGESTIONS
Elenka’s Sicilian Almond Paste is made with fine Sicilian almonds and gives gelato an intense, lasting taste.
Also excellent for granitas and almond milk and, in pastry, for creams. It is one of the ingredients of the Il Siciliano kit.
DOSAGE
Gelato: 130 g of paste + 100 g of whole milk per 1000 g of base mix.
Granitas and almond milk: 100/150 g per 1000 g of water.
Pastry: to taste.
PACKAGING: 3 kg bucket.
