Leagel Sweet Almond paste is made with 70% almonds, for a sweet, delicate gelato.
Besides being served on its own, Sweet Almond paste is a good starting point for pairings with Leagel ripples and crumbles; it saves preparation time in the lab.
Ideal for: almond gelato, frozen almond milk.
Features: 70% almonds, gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 80 g per kg of mix.
