DESCRIPTION AND SUGGESTIONS
Martini Gelato Pure Walnut Diamante Paste is a smooth 100% walnut paste for artisan gelato, with no flavourings or colourings and a medium roast.
The slightly tannic walnut taste is perfect with honey, figs and caramel and brings a less common autumn flavour to the display case.
Ideal for: walnut gelato, autumn flavours and cups.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
