Martini Gelato Blueberry Paste 70% is a paste for artisan blueberry gelato with 70% blueberries, with an intense, natural taste.

The high fruit content gives a deep colour and a rich aroma, for a blueberry sorbet or cream gelato that stands out in the display case.

Ideal for: blueberry gelato, rippled yogurt and cups.

Features: gluten-free.

Directions: add the paste to the base mix, stir well and batch-freeze.

Dosage: 50 g per kg of mix.
