DESCRIPTION AND SUGGESTIONS
Martini Gelato Caramel Paste is a paste for artisan gelato with 50% caramel and natural flavourings, for a sweet, toasted taste.
Besides classic caramel it allows variations like crème caramel or caramel and pear, and is completed by dulce de leche ripple.
Ideal for: caramel gelato, crème caramel and cups.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 50 g per kg of mix.
