Martini Gelato Biancolatte 50 S.A. is a fat-free, flavouring-free powder base for artisan gelato, designed for a custom white mix.
With no flavourings, the taste of the chosen pastes and ingredients comes through fully, without interference.
Ideal for: cream flavours with quality pastes and custom recipes.
Features: gluten-free, no hydrogenated fats, no added flavourings, Halal certified.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 50 g of base and 230-240 g of sugar per 1 litre of milk.
Processing: hot.
