DESCRIPTION AND SUGGESTIONS
This version of Leagel Pure Mediterranean Pistachio paste is also designed for pastry: intensely roasted pistachios with a touch of chlorophyll, perfect for pastry creams, mousses and fillings.
Pure Mediterranean Pistachio paste is one of the ingredients of the Leagel Mozartkugel recipe, together with Pasta Mandorla d’Avola and Variegato CioccoPistacchio; it saves preparation time in the lab.
Ideal for: pistachio pastry cream, mousses, filled croissants and gelato.
Features: Mediterranean pistachios, gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 80 g per kg of mix.
