DESCRIPTION AND SUGGESTIONS
Leagel White Almond paste is made from peeled, roasted almonds, with natural almond flavourings and whole almonds that, blended into the mix, give gelato a pleasant rustic texture.
In the Leagel Sinfonia di Mandorla recipe, White Almond paste is paired with Copertura Grand Cru and Mandorle Zuccherate; it gives a full, recognisable flavour, ready to batch-freeze.
Ideal for: almond gelato with pieces and granita.
Features: whole almonds, natural flavourings, gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 80 g per kg of mix.
