DESCRIPTION AND SUGGESTIONS
Martini Gelato Bitter Gianduia Paste is a paste for artisan gelato with 75% hazelnuts and little sugar, with a deeper colour and a bitter taste.
It suits both gelato and pastry: about 70 g per kg of base cream or whipping cream gives an intense gianduia in semifreddo and fillings.
Ideal for: dark gianduia, semifreddo and fillings.
Features: gluten-free, vegan, no hydrogenated fats, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
