Martini Gelato Smarty Nature is a powder base with natural flavourings for making artisan gelato without pasteurisation.
It combines the convenience of the Smarty range with a 100% natural, emulsifier-free formula, for speed without giving up a clean label.
Ideal for: natural gelato and kitchens without a pasteuriser.
Features: gluten-free, no hydrogenated fats, no emulsifiers.
Directions: blend the base with the liquids, mix and batch-freeze without pasteurising.
Dosage: 330 g per kg of mix.
