DESCRIPTION AND SUGGESTIONS
Martini Gelato Strawberry W Paste is a paste for artisan gelato with 80% strawberries, designed to be used with water in sorbets.
It gives a milk-free sorbet with a fresh, natural taste, suitable for vegan customers too; it is the counterpart to Strawberry M for milk bases.
Ideal for: strawberry sorbet, vegan gelato and granita.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers, Halal and Kosher certified.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 50 g per kg of mix.
