DESCRIPTION AND SUGGESTIONS
Martini Gelato Crema Antica Paste is a paste for artisan gelato based on milk and egg yolks, with a delicate lemon zest aroma.
It turns the white base into a traditional egg custard, like old-style gelato shops used to make, ideal for rippling with sour cherry or chocolate.
Ideal for: egg custard gelato, cremino flavours and classic cups.
Features: gluten-free, no hydrogenated fats, no emulsifiers.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 100-150 g per kg of mix.
