Martini Gelato Aymara Raw Modica is a complete powder base for artisan dark chocolate gelato with Modica PGI chocolate, for its typical raw texture.

It recalls the rough, grainy texture of Modica chocolate; in the Martini video it is paired with orange, one of the most classic Sicilian combinations.

Ideal for: Modica chocolate, Sicilian flavours and vegan menus.

Features: gluten-free, vegan, no hydrogenated fats.

Directions: dissolve the base in boiling water with a stick blender, allow to cool and batch-freeze.

Dosage: 1 bag + 2.2 L of boiling water.

Processing: hot.
