Leagel Cremosette Salted Butter Caramel is a spreadable cream for fine pastry, tasting of caramel with bold butter notes and a savoury edge that balances everything.
For croissants, Cremosette Salted Butter Caramel can be used before or after proofing, and before or after baking; warmed to 35 °C it becomes a glaze for semifreddi.
Ideal for: caramel tarts, croissants and bavarois.
Features: butter and cream powder, natural flavourings, fills, glazes and flavours, bake-stable, gluten-free.
Directions: fill before or after baking; to glaze, warm to 35 °C.
Dosage: as desired; to flavour cream and custards about 250 g per kg.
