DESCRIPTION AND SUGGESTIONS
Leagel Cremosette Hazelnut is a spreadable cream for fine pastry, tasting of toasted hazelnut.
For croissants, Cremosette Hazelnut can be used before or after proofing, and before or after baking; warmed to 35 °C it becomes a glaze for semifreddi.
Ideal for: brioche, crêpes and hazelnut semifreddi.
Features: fills, glazes and flavours, bake-stable, gluten-free.
Directions: fill before or after baking; to glaze, warm to 35 °C.
Dosage: as desired; to flavour cream and custards about 250 g per kg.
