Martini Gelato Biancolatte 100 is a powder base rich in milk and dairy, with refined vegetable fats, for silky, stable artisan gelato with a milk and cream taste.

Its balanced ingredients ensure excellent overrun and good holding in the display case, for everyday fior di latte and cream flavours.

Ideal for: everyday fior di latte and cream flavours.

Features: gluten-free, no hydrogenated fats.

Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.

Dosage: 100 g of base and 230-250 g of sugar per 1 litre of milk.

Processing: hot.
