Rubicone Cassata Paste is a concentrated flavouring paste for artisan gelato with the taste of traditional Sicilian cassata, with a rich, sweet and aromatic, with delicate pastry and candied fruit notes profile.

With Cassata Paste the flavour stays the same from batch to batch, because the dosage never changes; being vegan and dairy-free, it also works in water-based mixes.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 100 - 130 g per litre or 80 - 110 g per kg of mix.
