DESCRIPTION AND SUGGESTIONS
Leagel Citrus Cassata paste is made with candied fruit and citrus and recreates the taste of the typical Sicilian dessert.
Citrus Cassata paste is one of the ingredients of the Leagel Cassata dell'Etna recipe, together with Ricotta 50 GMS and Variegato CioccoPistacchio; it saves preparation time in the lab.
Ideal for: cassata gelato, ricotta and candied fruit.
Features: gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 100 g per kg of mix.
