DESCRIPTION AND SUGGESTIONS

Leagel Specialfrutta base enhances the natural taste of fruit and gives gelato a full-bodied, scoopable texture; it is also ideal for sorbets.

With Specialfrutta base, every batch starts from the same structure, so the gelato in the display stays consistent day after day; it leaves room for pastes and ripples to take centre stage.

Ideal for: fresh fruit gelato, sorbets and tropical fruits.

Features: fats: vegetable (coconut), gluten-free.

Directions: dissolve base and sugar in water and fruit and batch-freeze.

Dosage: 35 g per kg of mix.

Processing: hot (85 °C) or cold.
