Martini Gelato Neutro Unico is a powder stabiliser with emulsifiers and thickeners, ideal for both cream gelato and fruit sorbets.
One blend for the whole production: it simplifies stock and gives optimal structure to both milk and fruit bases.
Ideal for: home-made milk and fruit bases.
Features: gluten-free, vegan, no hydrogenated fats, Halal certified.
Directions: blend with the sugar and add to the mix before pasteurising or batch-freezing.
Dosage: 4-7 g per kg of mix.
Processing: hot.
